My yeast is so fresh, my dough rises so fast ... I have also learned to let the dough rest a couple of times as I add the flour. I find that I need less flour and the dough is so much lighter. My tea rings turn ...Hi Kim!<br />Thanks for stopping by!<br />My tea rings turn out a little different each time!<br />... when I want to achieve an awesome circle {albeit smaller than the ones pictured} I use an angelfood cake pan. This ensures a perfect circle :) You can also use a pizza pan to guide you as you lay the dough down... <br />I use a really nice cookie pan {very large size} to make sure the ring has enough room. I also make minis using pie plates or cake pans.<br />If after you make your ring, if it looks like the dough will come together in the center too closely as it rises... place a small {greased} ramekin in the middle. This will change the way the center looks {more bundt-like} but it won't be doughy :)<br /><br />This recipe was a "work in progress" for a long time until I got the hang of making bread.<br />Now, I add whole wheat flour, which changes the white flour amount. {I also found that if I put in half the flour--then let it rest for five minutes, I need less flour to finish the dough... this means less calories and a lighter finished product}<br />Even the weather changes things. In the summer, when it's hot and humid- and I'd rather not bake... the tea ring comes the best!
