Maria's Semi-homemade Choco-chip minis

{pictured in the top tray}

 *
  • Use one box of Krusteaz Chocolate Chunk cookie mix
    *follow directions on box*
  • Toss in two - three fist-fulls {literally} of one-minute oats.
  • add approx. 1/2 cup chopped walnuts
  • bake in mini-muffin tin {I used Pampered Chef's mini tray}
    *don't forget to lower heat to 325*
  • bake about 10 mins
{check on it... since minis are done faster than they look!}


  • When completely cooled, drizzle melted white chocolate
    {mixed with 1 tsp. oil} and
     
  • decorate with sprinkles!
Always add sprinkles to life

Moist Chocolate Brownies

These mini-brownies were the result of fudge gone wrong.
I thought it looked a little too thin, so I quickly hit the Eagle Brand website for redemption!
Voila!
Their recipe for moist chocolate brownies was perfect!
I just had to add the dry ingredients and
8 egg whites!
{with all the melted choco chips I had, the recipe was doubled!}

 Moist Chocolate Brownies

    * Servings: 18 brownies
    * Serving Size:

    * Prep Time: 20 Minutes
    * Cook Time: 20 Minutes

Ingredients

    * Crisco® Original No-Stick Cooking Spray
    * 3/4 cup semi-sweet chocolate chips
    * 1 (14 oz.) can Eagle Brand® Low Fat Sweetened Condensed Milk
      Or (14 oz.) cans Eagle Brand® Fat Free Sweetened Condensed Milk
    * 1/3 cup unsweetened cocoa powder
    * 4 large egg whites
    * 1/3 cup Pillsbury BEST® All Purpose Flour
    * 1 teaspoon baking powder
    * 1 teaspoon vanilla extract

Instructions

    * HEAT oven to 350°F. Spray 13 x 9-inch baking pan with no-stick cooking spray.
    * COMBINE chocolate chips, sweetened condensed milk and cocoa in medium saucepan. Cook over low heat, stirring constantly, until melted. Combine egg whites, flour, baking powder and vanilla in large bowl. Stir in chocolate mixture until blended. Pour into prepared pan.
    * BAKE 15 to 20 minutes or until center is set. Cool.

Sandra Lee's Semi-homemade
Macadamia-coconut sugar cookies

THEY ARE SOOOO GOOD!

Ingredients

  • 1 package sugar cookie mix
  • 1 egg
  • 1 stick butter, melted
  • 3/4 cup flaked sweetened coconut
  • 1/2 cup chopped macadamia nuts
    (recommended: Mauna Loa)

Directions

Preheat oven to 375 degrees F.
In a large mixing bowl, combine all ingredients for cookies. Stir until soft dough forms.
Drop cookie dough by tablespoonfuls onto ungreased cookie sheet. Bake for 10 to 14 minutes or until edges are light golden brown. Remove from oven and cool 1 minute.
