Something New Every Day

First,
I want to say
Thank You
for being such dear friends.
All of your kind wishes, prayers and thoughtfulness
strengthen my spirit.

There is something new to learn every day.
This week, there's been plenty!

phone calls, schedules, doctor's appointments, pharmacies, heat and humidity
You know!

...Amidst all of this...
There must be time to refresh.

Ahhhh yes,
No hot tea this week-too hot and humid.
...instead...
Ice Cold London Fogs!
Same recipe only on ICE

Fabulous!

Dad loves fish.
I told him he would be my first dinner guest trying out this invented recipe.
It's made with taboule.
Taboule is a Mediterranean treat made with lots of parsley, tomatoes, garlic, onions and couscous.
If you don't have time for homemade, Cedar's makes a great taboule salad.  
Why not try something new!
Just add more tomatoes and a little olive oil and use it as a topping for fish.
The haddock was really fresh... and the taboule topping was fabulous on it.
Angel hair spaghetti was the perfect side dish with more taboule topping.
Don't forget the parmesano reggiano cheese!

Dad gave it two thumbs up and thought we should try it with rice too.

My boys {husband, Chris and son, Jason} are in the Adirondack Mts. on a remote island
watching the Perseids Meteor Shower.
This is an annual event for them, with reservations made in January since they are taken quickly.
I hope they have some clear nights when they can row the boat to the middle of the lake and watch in awe.
This year, with just a crescent moon, the show should be spectacular!

  4. Lots to be taken care of, sweetest Maria. I admire the way you talk about your lovely family. Trying to point out to my children; friends come and go but your family will always be.
    So sweet of you to mention the good arrival of my petit package. Hope you will enJOY it. That little bouquet is so so cheerful indeed. It's the way I love flowers best. Wild and arranged like that!

  6. Glad to know you are still taking a little time out for yourself. That is important.

    Oh, I love taboule--one of our favorite dishes--but I haven't made it in a long time so I know what I will be making this weekend.

    I usually add a little more oil, lots more lemon juice and a little more salt that the recipe calls for. My mouth is watering right now.

    Fish looked great also.

  8. Oh my dear Maria...That recipe looks AMAZING!!!...YUM....I have never had a London Fog...hot or cold...I think I have been missing out on a whole lot!!!
    Koralee has just dropped off the sweetest little package...Ahhhh...I can't wait to open it!!!You are such a dear, dear, friend...I was soooo surprised when Koralee said it was from you____:)____

  9. Oh Maria it all sounds so good, the drinks, the food and an awesome meteor shower! I know how busy you must be right now. It can all be so overwhelming at times. Just don't forget to take time for yourself too. And try not to spoil dad too much! Love Di ♥

  10. I'm glad things are going well. When I went back to Florida with my dad after mom's funeral, we spent the first 2 weeks at the doctor, dentist, eye doctor and so on. He had missed so many of his appointments while mom was sick and when he was with us. I kept calling home telling my husband that I was spending all my time either in waiting rooms or in the car with a book! I just kept thinking of all the times my parents had done the same for me.

    Your dad is lucky to have you! I'm lucky to have "met" you.

    You are so very dear. Koralee dropped a little parcel off at the shop for me...I HAD to wait until I came home, so that I could take a "snappy" of this very pretty little bundle...after cleaning up supper dishes, I finally got a chance to open this precious parcel.
    My, my, my...this is perfect. I LOVE IT!!!...and I will definitely use it to dry my morning cuppa.
    Have I told you yet today, how I adore you?....Thank you dearest...love Rosie
