Rhubarb Cake by Linda's Sweet Mom

A few days ago, Linda @ Linda's Patchwork Quilt commented that she had made some rhubarb cake... Now, we have a LOT of rhubarb in the garden... soooo,
I asked her for the recipe... which was passed along by her mom...
AND HERE IT IS!


Rhubarb Cake by Linda's Sweet Mom

In a small bowl sift together:
2 cups flour
1/2 tsp. salt
1 tsp. baking soda

In large bowl cream together:
1/2 cup shortening
1 1/2 cups sugar

add one egg
beat one minute

one cup milk
1/2 cup chopped nuts
~ ~ ~

beat in flour mixture alternately with one cup milk (four first and last)
fold in 2 cups cut up rhubarb (1/2 inch slices)and 1/2 cup coursely chopped walnuts.

place in greased 13 x 9 inch pan
top with mixture of 1/2 cup sugar + 2 tsp. cinnamon

bake 30 minutes at 400 degrees and 5 minutes more at 375

She adds "All ovens are not the same so use good judgement."

***I substituted Smart Balance for the shortening and only used 1 cup sugar.***
***Still came soooo good***

It is delicious!!!
I made two batches!These two went in the freezer for next week when Dad visits.Here they are...fresh out of the oven! Son, Jason, is going to LOVE it!
If there's any left by the time I can get to his apt.!

  1. Mmm...sounds delicious. I'm going to have to try to grow some rhubarb next summer! My grandmother used to make a marvelous apple-rhubarb pie. I wish I had her recipe.

  5. Good morning! I had never heard of rhubarb cake before... and was so happy to try something new with all of our rhubarb! We must have almost twenty thriving plants. The leaves are like elephant ears so you can imagine!
    Almost everyone in the family loves rhubarb dumplings and rhubarb crisp (even yummier with strawberries added) ...
    ...but I've never made a cake! It's so delicious, Chris and I nearly ate 1/4 of it last night!
    *I'll bet you could substitute apples for the rhubarb!

    I use SB & less sugar for cholesterol issues...it still came soooo good!

  7. Oh this looks so good! Years ago when I was in Biola college I worked at Knott's Berry Farm in Buena Park, CA and they served rhubarb and that is the first time I had tasted it....since then I have been a fan.
    Thanks for the recipe...will add it to my "goodies" box.

  12. Amanda! I was thinking of you when we tried the cake... I'll be you'll LOVE it too... if not, I'd try another juicy fruit like peaches or pears... Apples would be okay too... oh really...any fruit! It's a fabulous 'starter' recipe and sooooo easy!
