It's Rhubarb Time!

My garden is flourishing with rhubarb this spring.
Chris added some awesome compost to the soil and 
the plants are loving it!

...and, it's time for Linda's Rhubarb Cake again...
See below for the easy recipe.

My breakfast this morning on my favorite spring plate!

Last night, we had lots of activity at our birdbath.
Chris noticed that a tiny sparrow was having as much fun
bathing in the water that puddled inside the rhubarb leaves.
It was so cute.
We sat very still to enjoy all the activity...
but I could resist no longer and crept to the window for a photo.
As I approached, all the birds scattered except the one frolicking in the leaves.

...There he is again...
How cute is that !

Rhubarb Cake by Linda's Sweet Mom
Last year, Linda @ Linda's Patchwork Quilt commented that she had made some rhubarb cake... Now, we have a LOT of rhubarb in the garden... soooo,
I asked her for the recipe... which was passed along by her mom...
AND HERE IT IS!

In a small bowl sift together:
2 cups flour
1/2 tsp. salt
1 tsp. baking soda

In large bowl cream together:
1/2 cup shortening
1 1/2 cups sugar

add one egg
beat one minute

beat in flour mixture alternately with one cup milk

fold in 2 cups cut up rhubarb (1/2 inch slices)and 1/2 cup coarsely chopped walnuts.

place in greased 13 x 9 inch pan
top with mixture of sugar  +  cinnamon
{I have a big shaker with cinn and sugar...about equal parts and I shake away!}

bake 30 minutes at 400 degrees and 5 minutes more at 375

***I substituted Smart Balance for the shortening***
{I reduce sugar by almost a third to make it nice and tart-and less cal's
and use 1c.whole wheat flour, 1c white for even more sustenance.}

It is sooooo delicious!!!
I made two batches!These two went in the freezer for when family visits.Here they are...fresh out of the oven! Son, Jason, is going to LOVE it!

  1. The rhubarb is such a beautiful plant isn't it, and the little bird is so sweet! I love your birdbath, so pretty! Love the cake recipe, thanks for that, I love anything with rhubarb in it, as a kid, I used to eat it right off the plant. I'll bet you could add the rhubarb to any cake mix, I would like a few nuts in there too and a bit of white powdered sugar glaze drizzled on top! When is the wedding by the way? I have been thinking about that, such an exciting time! Come say hi :D

    I love rhubarb. I have a friend who shared a wonderful strawberry rhubarb pie recipe with me. I will have to try the cake also. I haven't seen any ready around here yet. Your garden is beautiful. What else do you grow?
    I'm having fun catching up with my favorite blogs today after our long trip. I enjoyed seeing your shower and graduation events. You have beautiful children. Some days motherhood seems like such a long road but you are an inspiration to me!

  3. Yummmmmm....I adore rhubarb cake...this is the same recipe I use..exactly! You are so lucky to have it growing in your garden. I have to go to the market to buy mine. Love the memories rhubarb always brings...my grandma had it growing in her garden and we would get a big bowl of sugar and dip our rhubarb into the sugar and eat it..yummmmm those were the days.

  4. Oh Maria, how my Mom would love to have a rhubarb patch. It just doesn't work here in south Texas. However, we can always buy some at the grocery store.
    I love the picture of the little bird. It is such fun to sit and watch the birds come to our bird bath. Like you, I always run to get the camera, but am not often successful. Wonderful pictures.

  5. O.K., sweet Maria, now I want a birdbath too. Yours is great! How fun it must be to watch our little friends playing in a birdbath, especially in your beautiful birdbath. Your Spring plate is so lovely, that cute bird is painted very clear {do not know if this is the right word, I mean to say she could be real}

    That rhubarb cake...
    looks so yummmmmmeeee with a cup of coffee.
    I do believe I would have to have me a big ole SQUIRT of whipped cream!
    I am loving that you grow your very own rhubarb!

  14. I'm still recovering from not tasting the cupcakes with blossom icing and now you post this! Anything with rhubarb is my favorite. Luckily, I'm still traveling, and also, we don't have a rhubarb bush.
    PS That little bird has a lovely place for its splishing and splashing.

    Oh, so much to love in this post. The plate, the plate--I, too, love the plate and the birdbath is gorgeous and is that rhubarb growing right next to the birdbath. I don't think I know what rhubarb is. Not that we don't have it down here--I know we do--I just have personally never seen it growing for some reason.

    I hope you stay cool today. I am surmising that you guys don't have air-conditioning in your schools since you live in a cooler climate area.

    I remember teaching many years without air but one year in particular when our highs that September week were around 107. I would go home literally dripping from head to toe. It was killer year.

    We are supposed to be really warm today also.

    This post made me smile--alot.
